CORN PIE
PREP TIME: 10 minutes COOKING TIME: 30-40 minutes TOTAL TIME: 50-60 minutes SERVINGS- 8-10
INGREDIENTS
1 tin cream style corn (12 oz) 1 tin whole kernel corn (10 oz) drain out water 2 eggs beaten 1 onion finely chopped 5 pimento peppers finely chopped 1 cup evaporated milk 1 red sweet pepper (optional) Vz cup promasa/cornmeal Vi cup/ 2 oz. butter Vi tsp. salt Grated cheddar cheese 3/4 cup (optional)
INSTRUCTIONS
Preheat oven to 350 degrees F Melt butter in a saucepan on medium heat, add finely chopped onion and pimentos for two minutes, then add sweet pepper and cook for an additional minute.
Add evaporated milk and lower heat to a simmer.
Add cornmeal and continue mixing, add cream style corn and drained whole kernel corn In a bowl mix eggs together, then slowly add eggs to saucepan mixture on a medium low heat, until the mixture pulls away from the side of the pan Pour into a prepared casserole/ baking dish, sprinkle with cheddar cheese (optional) and bake 30-40 minutes. Allow to cool 25-30 minutes before you cutting
